Cinnamon Waffles Topped with Sauteed Apples


Cinnamon spiced, fluffy waffles are topped with apples sauteed in a sweet sauce.  No need to add syrup!


Cinnamon Waffles

Ingredients

  • 2 eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tablespoon white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch nutmeg

Directions

Preheat waffle iron. Separate eggs and beat egg whites until fluffy and set aside.

Beat yolks in large bowl until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, vanilla, cinnamon, and nutmeg just until smooth.  Add egg whites.

Allow the batter to set for about five to ten minutes.  As you wait, prepare the sauteed apples (see below for recipe).  

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.


Serve with sauteed apples on top.




Sauteed Apples


Ingredients


  • 1/4 cup butter
  • 4 large tart apples - peeled, cored and sliced 

  • 2 teaspoons cornstarch
  • 1/2 cup cold water
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Directions

In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender.

Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon.  Stir to coat and cook for about a minute.  Cover.
